MASSAGED KALE SALAD WITH WALNUTS

Ingredients
  

  • 1 bunch of kale thinly sliced
  • ½ bunch parsley chopped
  • 1 lemon juiced
  • 1 garlic clove minced
  • 1 avocado sliced
  • 1 tablespoon extra-virgin olive oil
  • sea salt and black pepper to taste
  • ¼ cup walnuts
  • 1 15- ounce can chickpeas drained and rinsed (BPA free can)

Instructions
 

  • Add the kale to a large bowl. Add parsley, lemon juice, garlic, avocado, olive oil, sea salt, and pepper. Use your bare hands to massage the salad together until the kale is soft and wilted. The kale leaves should turn a dark green color. Add the garbanzo beans, walnuts, and turkey slices (optional). Toss before serving.
