Wow! Can you believe Christmas is almost here?

I just can’t believe 2021 is just around the corner. We’ve talked a lot about the holiday season. Thanksgiving didn’t leave us much time to get into the “holiday spirit” and start the mad dash for shopping, etc.

Over the years, I’ve learned how to slow down and enjoy the holidays more. The “frenzy” with holiday shoppers, all the food, baking, social events, holiday work parties, etc. used to leave me so drained and stressed out that I would sometimes wonder if it was all worth it! Then add grandchildren to the mix and the great blessing they bring, I really wanted to be able to enjoy the time with them and not just be part of the craziness and stress of the season.

So I made some changes, slowed down, cut down on the perfectionism route I seemed to be always caught up in, and I now try, as best as I can, to truly enjoy the season and remember “the reason for the season.”

Since Christmas is just about here, I didn’t want to overburden you with just another piece of email in your mailbox or another blog to read, so I decided instead to give you a handout to help you be more mindful through the holidays. I really hope you’ll take a few minutes to read it. I truly believe it will help motivate and help you so that you can be more mindful of the season and the things around you. It’s here to enjoy!

CRANBERRY APPLE SALAD:

Ingredients
  

Dressing Ingredients Option 1:

  • 2/3 cup Sour Cream
  • 1/3 cup mayonnaise

Dressing Ingredients Option 2:

  • 1 cup apple juice
  • 4 tablespoons apple cider vinegar or white vinegar in a pinch
  • 2 tablespoons honey
  • scant ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup oil

Salad Ingredients:

  • 2 Medium 2 cups apples, cubed 1/2 inch
  • 2 teaspoons lemon juice
  • 1/2 cup sweetened dried cranberries
  • 1/2 cup seedless green grapes halved
  • 1/2 cup chopped walnuts
  • 1 rib 1/2 cup celery, chopped

Instructions
 

  • Combine sour cream and mayonnaise in small bowl; set aside.
  • Place apples and lemon juice in a large bowl; gently toss.
  • Add all remaining salad ingredients. Add dressing; toss to coat.
  • Cover; refrigerate 1 hour before serving.
