Apple Banana Breakfast Bowl

Ingredients
  

  • 2 med bananas ripe
  • 4 eggs
  • 1 tbsp coconut oil
  • 1 apple cored and sliced
  • 3 tbsp dried coconut flakes preferably unsweetened
  • 2 tsp cinnamon preferably Ceylon Cinnamon
  • 3 tbsp almond butter

Instructions
 

  • Cook eggs
  • Mash the bananas in a small mixing bowl, then stir in the eggs and vanilla.
  • Next, coat the bottom of a pan with coconut oil and place over medium heat.
  • Add the banana-egg mixture to the pan and stir continuously with a spatula until cooked to your liking.
  • Assemble the breakfast bowl.
  • Transfer the mixture to two bowls, top with apple slices, coconut flakes, cinnamon, and almond butter.
