Apple Banana Breakfast Bowl

- 2 med bananas ripe
- 4 eggs
- 1 tbsp coconut oil
- 1 apple cored and sliced
- 3 tbsp dried coconut flakes preferably unsweetened
- 2 tsp cinnamon preferably Ceylon Cinnamon
- 3 tbsp almond butter
Cook eggs
Mash the bananas in a small mixing bowl, then stir in the eggs and vanilla.
Next, coat the bottom of a pan with coconut oil and place over medium heat.
Add the banana-egg mixture to the pan and stir continuously with a spatula until cooked to your liking.
Assemble the breakfast bowl.
Transfer the mixture to two bowls, top with apple slices, coconut flakes, cinnamon, and almond butter.
