SPINACH AND PARSLEY EGG SCRAMBLE

Ingredients
- 4 eggs
- 1 tablespoon coconut oil
- 2 cups spinach
- ½ bunch parsley chopped
- 2 scallions
- 1 teaspoon oregano
- sea salt and black pepper to taste
Instructions
- Crack 4 eggs into a mixing bowl and whisk with a fork. Set to the side.
- Next, add coconut oil to a hot pan. When the oil has melted, add spinach, parsley, scallions, oregano, sea salt, and pepper. Sauté for about 3 minutes until the spinach is wilted. Pour the eggs into the pan. Mix the eggs and vegetables using a rubber spatula.
- Cook until well done.
- Serve immediately.
