BLACKBERRY QUINOA

Ingredients
  

  • 1/2 cup quinoa
  • 1 cup water
  • 1/2 cup almond milk
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/2 cup dried cherries
  • 1/2 cup cashews
  • 1/2 cup fresh blackberries

Instructions
 

  • Bring quinoa, water, almond milk, cinnamon, and vanilla extract to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and has absorbed the water, about 15 minutes. Remove saucepan from heat. Mix cherries and cashews into the quinoa mixture. Top with blackberries and serve.
