SPINACH AND PARSLEY EGG SCRAMBLE

Ingredients
  

  • 4 eggs
  • 1 tablespoon coconut oil
  • 2 cups spinach
  • ½ bunch parsley chopped
  • 2 scallions
  • 1 teaspoon oregano
  • sea salt and black pepper to taste

Instructions
 

  • Crack 4 eggs into a mixing bowl and whisk with a fork. Set to the side.
  • Next, add coconut oil to a hot pan. When the oil has melted, add spinach, parsley, scallions, oregano, sea salt, and pepper. Sauté for about 3 minutes until the spinach is wilted. Pour the eggs into the pan. Mix the eggs and vegetables using a rubber spatula.
  • Cook until well done.
  • Serve immediately.
