Black Bean Taco Salad
Healthy and Easy Salad for Dinner
Ingredients
- 8 cups Baby spinach
- 8 cups Romaine lettuce
- 2 15-oz, cans Black beans drained and rinsed
- 1 1/2 cups Black olives
- 2 lg. Tomatoes chopped
- 1 small Red onion finely chopped
- 1/2 bunch Cilantro chopped
- 3 Limes juiced
- 2 tsp. ground cumin
- 1 tsp. Chili powder
- Sea Salt to taste
- Black Pepper to taste
- 1 cup Feta cheese optional
- 2 Avocados sliced
Instructions
ASSEMBLE SALAD
- Add spinach and romaine to a large mixing bowl and set aside.
- Add the remaining ingredients to a separate mixing bowl.
- Mix well.
- Add to the lettuce before serving.
