Autumn Stuffed Sweet Potato

A great seasonal option

Ingredients
  

  • 2 Sweet potatoes
  • 1/2 tbsp olive oil
  • 1/4 cup yellow onions diced
  • 1/3 cup mushrooms diced
  • 2 tbps dried cranberries
  • 1/2 tsp ground cinnamon preferably Ceylon Cinnamon
  • 1/2 tsp cashews
  • 1 tsp real maple syrup
  • 1 tsp poultry seasoning

Instructions
 

  • Place sweet potatoes on a baking sheet and bake at 400 degrees for one hour
  • Once cool, carefully slice potatoes and scoop out most of the potato to mash with a fork
  • Let sweet potatoes cool
  • Add all remaining ingredients in a bowl and stir together
  • Carefully stuff potatoes with the mixture
  • Bake for another 10 minutes
  • Enjoy!
