DELICIOUS DETOX PESTO
- 1 bunch cilantro
- 1 bunch parsley
- 1 bunch mint
- ½ cup pumpkin seeds
- 2 garlic cloves
- 1 lemon juiced
- 1/4 cup extra virgin olive oil
- sea salt and black pepper to taste
Combine the cilantro, parsley, mint, pumpkin seeds, and garlic in a food processor or high-speed blender; pulse and process the mixture until it is finely chopped. Add the lemon juice and slowly add extra virgin olive oil in a steady drizzle.
Process until mixture becomes a smooth, light paste. Add enough olive oil to keep it moist and spreadable. Season with sea salt and mix well. Cover tightly and chill in the refrigerator for at least 1 hour to allow the flavors to marinate.
