Ingredients
  

  • 4 cups baby spinach
  • 2 hard-boiled eggs sliced in half
  • 1/2 bunch parsley chopped
  • 1 large beet shredded
  • 1 large apple chopped
  • 1 large carrot shredded
  • 1/4 cup sunflower seeds
  • 1 avocado diced
  • 2 radishes chopped in half
  • 1/2 cup

    Lemon Basil Dressing

Lemon Basil Dressing

  • 2 large lemons juiced
  • 2 tsp. basil dried
  • 1/4 cup olive oil extra virgin
  • sea salt to taste
  • black pepper to taste

Instructions
 

  • Combine all ingredients in a large mixing bowl.
  • Toss and serve.

Lemon Basil Dressing

  • Add all the ingredients to a small bowl and whisk until well incorporated.






Notes

Omnivore Option: Add one BPA-free can of tuna (drained, rinsed, and broken up with a fork).
